Rocky Crib Adventures
We are on day 12 of the crib migration and she hasn’t yet fallen asleep in our bed for the night. She has definitely found her way in a few nights after a 6am wakeup, or a few nights ago it was 1am and after a few hours of sleep. C and I rocked and shh’d until we nearly fell asleep on our feet and just decided short of having her cry bloody murder, she won that night. She’s slept through the night three nights. She’s gone down in a few moments or a few hours depending on the day. Unfortunately, it’s getting more like a few hours lately. Is it possible that it’s getting worse?
Sometimes I feel like she and I are attached at the hip, for better or worse. When we sleep together, we both seem to sigh in relief. I miss her so much at this point. But I also am happy she has slept through the night and is spending time in her own room. That is the whole reason we now have a three bedroom.
Overall, I’m pretty torn. Being a new parent can feel isolating at times. I’ve read a multitude of books. Each parent and each child is so different with their needs, how can anyone write a book for everyone? So I sit here now at 10:18 listening to my little love wail in her room. She is a stubborn one, I’ll tell you that. And someday, that will help her get where she wants in life. Couldn’t she just develop this personality trait a little later in life?

The Great Crib Migration
Charlotte slept in her crib for the first time last night. It was tough, really tough. Between 9:30 and 12:30, we were up every few minutes rocking and humming and doing everything we could to get her to adjust to her new space. I wanted to just grab her and take her to bed, but with the help of C, I persevered. At 12:30, I decided to get some sleep and planted the monitor right next to my head. Our giant king size bed seemed to go on forever without a little snuzzler pushing me off the bed. It was an emotional time. I did sleep much better though.
C was so nervous about not waking up that he stayed up until 3am just in case. Between 12:30 and 3:00 she did get up a few times and he was right next to her, reassuring her that we didn’t high tail it out of her life.
He crawled into bed around three, I woke up to pump and she didn’t wake up until 6am for a feeding and 10am for good. Not bad for night #1.
The following day, she went down for a 2 hour nap in her crib at noon, a smaller 45 min nap at 4 and somehow, I got her down in her crib after a little nursing right around 9:30. She woke up at 10:30 for a quick snack and then proceeded to sleep until this very late 4am hour… she’s still asleep and I’m tempted to go in to make sure she’s still alive.
This second day has been a breeze to say the least, it makes me wonder if she’s always been the type of baby to sleep better on her own. I can’t decide how I feel about the 7.5 month transition from co-sleeping timeline. Maybe earlier would have made sense? But honestly, I loved every minute of the time we co-slept so in that case, maybe our timing for the transition was just perfect.

Sweet Potato & Black Bean Enchiladas Recipe

We made these a few days ago for dinner and fell in love. The sauce is delicious and the filling was delish. If you are in a time crunch, try microwaving the sweet potatoes a little first to cut down on cooking time. Also, don’t make my mistake, warm your tortillas first to ensure they don’t crack when making the enchiladas.
ingredient list
Serves 8 (makes 16 enchiladas)
Sauce
- 1 15-oz. can tomato sauce
- 1 3/4 cups low-sodium vegetable broth
- 1 tsp. ancho chile powder
- 1 tsp. Simply Organic chili powder
- 1 tsp. Simply Organic garlic powder
- 1 tsp. Simply Organic onion powder
- 1 tsp. Simply Organic dried oregano
- 1/2 tsp. Simply Organic chipotle chile powder
Filling
- 1 Tbs. Spectrumextra virgin olive oil
- 1 small onion, diced (1 cup)
- 1 1/2 lb. sweet potatoes, peeled and diced (3 cups)
- 1 15-oz. can diced tomatoes, drained
- 1 16-oz. jar prepared medium salsa
- 2 cloves garlic, minced (2 tsp.)
- 1 chipotle chile in adobo sauce, drained and minced
- 1 15-oz. can Eden Organic black beans, rinsed and drained
- 1 12-oz. round queso fresco, divided
Enchiladas
- Spectrum extra virgin olive oil, for brushing baking dish
- 16 6-inch corn tortillas, warmed
- 2 limes, cut into wedges
- 1 avocado, sliced
- 1/2 cup sour cream, for garnish
- Cilantro sprigs, for garnish, optional
DIRECTIONS
1. To make Sauce: Bring all ingredients to a simmer in saucepan over medium heat. Whisk to combine, then remove from heat. Season with salt and pepper, if desired.2. To make Filling: Heat oil in separate saucepan over medium heat. Add onion, and sauté 3 to 5 minutes, or until soft. Add sweet potatoes, tomatoes, salsa, garlic, chipotle chile, and 1/2 cup water; bring to a boil. Reduce heat to medium-low, and simmer 30 to 40 minutes, or until sweet potatoes are soft. Mash mixture with potato masher until combined. Add black beans, and cook 5 minutes. Stir in half of queso fresco, and remove from heat.
3. To assemble Enchiladas: Preheat oven to 350ºF. Brush 13- x 9-inch baking dish with oil. Spread 1/2 cup Sauce in bottom of dish. Fill tortillas with Filling. Roll, and pack close together seam-side down in baking dish. Top with remaining Sauce and queso fresco. Bake 15 minutes.
4. Adjust oven to broil. Broil Enchiladas 5 minutes, or until cheese is browned and bubbly. Let rest 10 minutes before serving. Garnish with lime wedges, avocado slices, sour cream, and cilantro sprigs, if using.
